Hi @SRitchie, sorry to hear about this.
I am afraid that there is no way to undo a deletion of a photo once you have deleted it in the album app. However, if the photo has been backed up in the photo app, you can recover the photo from the cloud back to your device. If so, open the photo app > Tap on the photo you want to recover > Tap the menu icon (three vertical dots) > Tap "Save to device".
