How can I secure my Youtube and Gmail accounts better on Android?

If I borrow my phone to a friend and I have signed out from Youtube, then my friend can just open Youtube app and select my account and it logins automatically without asking for any password.

You can use apps from the android market such as app lock (Link Below) that allows you to lock individual apps in your phone therfore giving you more protection.

Except from apps, it's a bit tricky to solve your question since you log on one time and then really can't log out except from performing a hard reset or updating your phone via PC Companion/Update Service to log out.
