How to manually start Google Backup and Restore application to make backup of phone. There is only an option: "Under Google™ Backup & Restore, tap the Automatic restore slider" and thats all, and I can't find no information what is triggering Google backup to start.

I got Nougat 7.1.1 and it's Settings>Backup & restore> and then there are "Xperia backup and restore" and "Google backup and restore". Under Xperia app you can start backup manually, into cloud (I guess it's Sony cloud) or into memorycard. But you can restore the Xperia backup into Xperia phone. Under Google Backup there are only 3 options: Backup data - on/off; Backup account and Automatic restore - on/off. So no option to start manually or choose which data to backup. It backs up some data into Google Drive but user has no control when it starts and what data is saved.
if you backup through google it will backup whenever you have Wifi access, if you use Sony's backup you can select what you want to backup and how often (you want the phone to create a backup), but you are right, there isn't a way to start the backup process.
I suppose that google backup will be the option to go, as for videos and photos you can use google photos and if you set it as to automatic backup it will do so whenever you are using WiFi
